This week I made something I've never made before. I thought they looked delicious, so the time seemed right to make them.
I started out with getting all the ingredients ready, I find it makes things much easier for me. In a large bowl mix together peanut butter, butter and vanilla extract.
After well mixed together, sift in powdered sugar.
Then mix well. After trying my mixer for a while I ended up using my hands. It worked out great. Then make into balls. Put ball mixture in the fridge for at least 30 minutes.
Mix chocolate and shortening. Put in microwave 30 seconds at a time. Repeat until smooth. Using a toothpick (which I did not use) to grab a peanut ball and dip into chocolate. Optional, next dip in to sprinkles. Then use your finger to smooth out the whole left behind.

1 1/2 cups Creamy Peanut Butter

1/2 cup Butter (softened)

3 1/2 cups powdered sugar (sifted)
- 1 teaspoon vanilla extract

1 cup chocolate chips

1 tablespoon Vegetable Shortening

1/2 cup Holiday Sprinkles (optional)
Directions
- Mix together peanut butter, butter and vanilla extract

Place the peanut butter, butter and powdered sugar in a large bowl. Mix until the ingredients are incorporated

Use your hands to form balls, Place balls on wax paper

Refrigerate the peanut butter balls for at least 30 minutes
Chocolate Topping - Sprinkles (optional)
- In a medium bowl, add chocolate chips and shortening

Microwave in 30 second intervals or until melted. Stir until smooth and thoroughly combined.

Remove the buckeye balls from the fridge. Use a toothpick to pick up each ball and dip it into the melted chocolate.

(Optional) Roll the ball in sprinkles before chocolate sets.

Repeat with each ball.

Use your finger to smooth over the top of each ball to remove the mark from the toothpick.
