Caramel Chocolate Cookies

Caramel Chocolate Cookies

This is a cookie I've never baked before, but they turned out great. They may not look great but they tasted it.  Being totally honest, it had a lot of steps and towards the end I was getting tired, which is my fault for making them a little late in the evening. After tasting them, I would definitely make them again and maybe add some pecans. I've seen these cookies called Twix cookies and that's a good comparison. If I add pecans then it would be similar to turtle candy.

The recipe is at the bottom.

Blend butter until light and fluffy. Add in powdered sugar and blend well. Next add in vanilla extract.
Mix in flour and salt and combine well. I started out with my mixer but found using my hands at the end worked better.
I rolled the batter in a roll and placed in the freezer. Freeze for 20 minutes.
**Another option is to roll out the dough and use a round cookie cutter.
Slice the cookie dough and place on baking sheet. Bake at 350 degrees for 12 - 13 minutes.
Place on a cooling rack. Let the cookies cool about 20 minutes.
In a microwave safe dish, melt caramels and evaporated milk. Once melted add to cookies with a spoon. Let the caramels set for 20 minutes.
In a microwave safe dish, melt chocolate chips and shortening. Once melted add to cookies with a spoon.
Mishaps are my favorite 🙀😺😻:
The mixer wasn't working that great, so I used my hands.
I let the dough in the freezer longer because the family wanted dinner. How dare they! LOL.  So, it was a little hard to cut at first.
One of the cookies obviously, had to fall off the cooling rack.
