Easy to Make Cheesecake

 This week I wanted to make something easy but still delicious. So this week I went with a no bake cheesecake. To make it even easier I used a store-bought graham cracker pie crust. 

It was a hit with my husband, who said "no more store bought cheesecake."

Place on a cooling rack. Let the cookies cool about 20 minutes.
Spread out the cheesecake filling. Toppings are optional. I melted chocolate chips. I used about a cup (I measured with my heart) and a teaspoon of shortening. I also cut up 1 - 1 1/2 cups of strawberries. I love strawberries but not everyone here does. So we just put them on our own piece of cheesecake.

I don't know how I manage to always have mishaps, but here we are again. This time when I lifted the cheesecake up the tin folded. I was laughing afterwards. I thought this week would be easy. The second mishap was totally my fault. I was impatient and wanted to cut a piece for pictures instead of letting it set in the fridge for a while. It didn't look great but it tasted amazing.
Ingredients

16 ounces cream cheese, softened
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup powdered sugar
1 teaspoon cornstarch

Topping (optional)
1/2 cup of chocolate chips
1 teaspoon shortening
1 1/2 cups cut strawberries

Directions

  • Beat the cream cheese until smooth
  • Add vanilla extract and heavy whipping cream, mix well
  • Combine powdered sugar and cornstarch, combine with wet ingredients and mix well
  • Place in pic crust and let chill before serving

Toppings (Optional) - the topping can go on individual slices or the whole cheesecake

  • Cut up strawberries and put on cheesecake
  • In a microwave safe dish melt chocolate chips and shortening
  • 30 - 45 second intervals until melted.
  • Use a spoon to spread drizzle over cheesecake
